Healthy Hummus Board

It was no secret that I didn’t love the trending butter board that was going around. So I thought I’d make a healthier version using hummus.
I LOVE hummus, I have it several times a week with so many different things. This is an interesting way to make an entertaining dip a bit more exciting. So easy, so fresh, it looks great and it tastes amazing!

Ingredients
  

  • 2 cups hummus homemade or store bought
  • 1 lebanese cucumber finely diced
  • 1/2 cup cherry tomatoes chopped
  • 2 tablespoons jarred marinated red peppers sliced into strips
  • 3 radishes finely chopped
  • 3 spring onions finely sliced
  • 2 tablespoons kalamata olives pitted, chopped
  • 2 tablespoons dill
  • sea salt & cracked black pepper
  • 1/2 lemon juice squeezed

Instructions
 

  • Spread the hummus across your board (you may need to use more if using a big board).
    2 cups hummus
  • Sprinkle over all your chopped vegetables and herbs. Season well and squeeze over some lemon juice.
    1 lebanese cucumber, 1/2 cup cherry tomatoes, 2 tablespoons jarred marinated red peppers, 3 radishes, 3 spring onions, 2 tablespoons kalamata olives, 2 tablespoons dill, 1/2 lemon
  • Serve with toasted baguette, crackers or lavosh – whatever you like!
