Entertaining Crostini – Two Ways
The perfect, fuss-free entertaining starter! Great for Christmas or the holiday season ahead. You can put them together in no time and they are a complete flavour bomb in your mouth!
Ingredients
BAKED BRIE CROSTINI WITH APPLE, HONEY & THYME
- 16 crostini or mini toasts store bought
- 100 g brie cheese triple cream
- 1 red apple small, cut into very thin slices
- 1–2 tablespoons honey
- 16 sprigs thyme small
- extra virgin olive oil
- sea salt
RICOTTA & LEMON CROSTINI WITH BALSAMIC STRAWBERRIES
- 16 crostini or mini toasts store bought
- 3 tablespoons ricotta cheese
- 1 teaspoon lemon zest
- 1–2 tablespoons lemon juice
- sea salt & black pepper
Balsamic strawberries
- 6 strawberries cut into slices
- 1 tablespoon balsamic vinegar
- 1 teaspoon brown sugar
- mint leaves thinly sliced, to garnish
Instructions
BAKED BRIE CROSTINI WITH APPLE, HONEY & THYME
- Preheat the oven to 180°C conventional (160°C fan-forced). Place the crostini on a baking tray. Thinly slice the triple cream brie and arrange the slices evenly on each toast. Bake for 7–9 minutes until the brie has melted. Remove and cool for 2–3 minutes. Top the brie with small slices of red apple. Drizzle the honey over the brie and apple. Scatter small sprigs of thyme on top for a burst of flavour, then drizzle with olive oil and sprinkle with salt.
RICOTTA & LEMON CROSTINI WITH BALSAMIC STRAWBERRIES
- Place the crostini on a platter. In a small bowl, mix the ricotta cheese, lemon zest and lemon juice, then season with sea salt and pepper to taste. Spread this ricotta mix evenly on each toast. For the balsamic strawberries, place the strawberries, balsamic vinegar and brown sugar in a bowl and toss well. Place a few balsamic strawberries on top of each ricotta-covered toast. Once done, garnish with thinly sliced fresh mint.
