BACON, CHERRY TOMATO & CHEESE EGG FLIP 

Ingredients:

  • 1 tortilla medium/large

  • 2-3 eggs beaten

  • 1/2 cup cherry tomatoes halved

  • 1/2 cup bacon finely chopped

  • 1/2 cup mozzarella cheese grated

  • 1/2 cup spring onion finely sliced

  • 1/2 cup rocket

Instructions:

  1. Place a large frying pan (one that is about the size of the tortilla) onto medium heat. Add the bacon, cherry tomatoes and let them cook for 2-3 minutes. Then add the whisked eggs, spring onion and grated cheese. Cook for 3-4 minutes.

  2. Place the tortilla on top of the eggs, then flip the tortilla over with a spatula or dinner plate, so that the egg is facing up.

  3. Add more grated cheese, spring onion and rocket to one side of the tortilla. Fold the right half of the tortilla over so it sits on top of the left side and remove from the pan. Slice into wedges and enjoy.
