Bacon, Cherry Tomato & Cheese Egg Flip
Ingredients
- 1 tortilla medium/large
- 1/2 cup bacon finely chopped
- 1/2 cup cherry tomatoes halved
- 2–3 eggs whisked
- 1/2 cup spring onion finely sliced
- 1/2 cup mozzarella cheese grated
- 1/2 cup rocket
Instructions
- Place a large frying pan (one that is about the size of the tortilla) over medium heat. Add the bacon and cherry tomatoes and let them cook for 2–3 minutes. Next add the whisked egg, spring onion and grated cheese, reserving a little spring onion and cheese for topping. Cook for 3–4 minutes.
- Place the tortilla on top of the egg, then flip the tortilla and egg over with a spatula or dinner plate, so that the egg is facing up.
- Add the remaining spring onion and grated cheese as well as the rocket to one side of the tortilla. Fold the right half of the tortilla over so it sits on top of the left side and remove from the pan. Slice into wedges and enjoy.
