CREAMY MEDITERRANEAN PASTA SALAD

Serves 6 as a side.


Ingredients:

  • 1.5 cups short form pasta (eg. Bow ties, penne, spirals)

  • 2 cups rocket, roughly chopped

  • 200g cherry tomatoes, quartered

  • 2-3 lebanese cucumbers, chopped

  • 1/2 red onion, finely sliced

  • 1 cup parmesan, grated

Dressing:

  • 1/2 cup pesto (homemade or store bought)

  • 2 tablespoons Greek/natural yoghurt

  • 1-2 tablespoons water (added slowly until desired consistency)

  • Salt & Pepper

Method:

1. For the salad: Add all ingredients to a large bowl and combine well.

2. For the dressing: Mix the pesto and yoghurt. Then slowly add water until desired consistency is reached. Season well.

3. Drizzle the dressing all over the salad and mix well to combine. Season well with sea salt & pepper.
