Creamy Mediterranean Pasta Salad
Serves 6 as a side
Ingredients
- 1 1/2 cups short pasta such as bow ties, penne or spirals
- 2 cups rocket leaves roughly chopped
- 200 g cherry tomatoes quartered
- 2–3 lebanese cucumbers chopped
- 1/2 red onion finely sliced
- 1 cup parmesan cheese grated
Dressing
- 1/2 cup pesto homemade or store bought
- 2 tablespoons greek yoghurt or natural yoghurt
- 1–2 tablespoons water
- sea salt & cracked black pepper
Instructions
- Cook the pasta according to packet instructions. Drain, rinse and leave to cool.
- For the dressing: Mix the pesto and yoghurt in a small bowl. Slowly add water until your desired consistency is reached. Season well.
- Place the cooked pasta and all the remaining ingredients in a large bowl and combine well.
- Drizzle the dressing over the salad, season well and toss to combine.
