Passionfruit & Citrus Slice
This slice is one of my favourite guilty pleasures! It combines some of my most loved ingredients – coconut, lemon and passionfruit. Super easy and so yummy.Makes 12 pieces Prep time: 20 minutes Cook time: 15 minutes

Ingredients
Base
- 125 g butter melted
- 1 cup self-raising flour
- 1/2 cup shredded coconut
- 3/4 cup caster sugar
Topping
- 600 g sweetened condensed milk about 1 1/2 cans
- 2/3 cups lemon juice
- 3 passionfruit pulp
Instructions
- Preheat the oven to 180°C conventional (160°C fan-forced). Line a 28 cm x 18 cm baking tray with baking paper.
- For the base: Place all the ingredients in a bowl and mix well. Press into the prepared tray and spread evenly with a wooden spoon (it doesn’t have to be perfect). Bake for 12–14 minutes or until golden brown. Remove and let cool.
- Reduce the oven temperature to 160°C conventional (140°C fan-forced).
- For the topping: Place all the ingredients in a bowl and mix well. It will thicken up as you mix. Spread evenly over the cooked base, then bake for 15 minutes.
- Refrigerate for 2–3 hours to firm up, then slice into pieces. It is magical!
