SALTED CARAMEL SLICE

Ingredients:
Base:
1 cup brown sugar
2/3 cup fine yellow polenta
3/4 cup self-raising flour
1/2 teaspoon baking powder
150g butter, melted
Topping:
60g butter, melted
1/4 cup golden syrup
790g tins condensed milk
teaspoon sea salt flakes
Method:
Preheat oven to 180 degrees. Line a baking tray (about 28cm X 18cm)
Base: Combine the brown sugar, polenta, SR flour, baking powder and melted butter. Mix well. Press this mix into the lined baking tray (doesn’t have to be perfect) and spread evenly with a wooden spoon. Bake in the oven for 25 mins or until golden brown. Remove and let cool.
Topping: Mix the melted butter, golden syrup and condensed milk in a heavy-based saucepan. Place over medium heat and stir constantly for about 15-20 mins until the mix has thickened.
Pour over the base and spread evenly. Sprinkle with sea salt and bake for a further 20 minutes or until golden in colour. Leave to cool in the tin before slicing.
