One Dish Lasagna With Leg Ham & Buffalo Mozzarella
Not a traditional lasagna, but a different take on one. It’s easy, takes very little prep and is great for the whole family. My girls love it, which is a massive win for me.
Ingredients
- 2 x 700 ml passata bottles
- 1 cup basil leaves
- 250 g lasagna sheets
- 250 g leg ham good quality, sliced
- 2 x 125 g mozzarella cheese balls or fior di latte, cut into slices
- 1 1/2 cups parmesan cheese grated
- 2–3 cups spinach
- sea salt & cracked black pepper
- 200 g artichokes in olive oil drained & halved (optional)
Instructions
- Preheat the oven to 200°C.
- In a large roasting dish (mine was 30 cm x 20 cm), spread out a thin layer of passata across the base. Add some basil leaves. Spread two lasagna sheets across the top of the passata, followed by some more passata, pieces of ham and sliced mozzarella. Sprinkle with one-third of the parmesan cheese and one-third of the spinach leaves. Add some more basil leaves and season well. Repeat this process another time. Once you have two full layers, cover the top with the last of the lasagna sheets, some more passata, any mozzarella or parmesan you have left and artichokes (if using).
- Bake for 30–35 minutes. The cheese should be golden and bubbling.
