One Dish Lasagna With Leg Ham & Buffalo Mozzarella
Not a traditional lasagna, but a different take on one. It’s easy, takes very little prep and is great for the whole family. My girls love it, which is a massive win for me.
Ingredients
- 2x 700 ml passata sauce bottles
- 250 g lasagne sheets I used @ranapasta_aus_nz
- 250 g leg ham sliced good quality
- 2x 125 g mozzarella cheese balls, cut into slices (or fior di latte)
- 2-3 cups spinach leaves
- 1.5 cups parmesan cheese fresh grated
- 200 g artichokes in olive oil drained and halved (optional)
- 1 cup basil leaves fresh
- sea salt
- cracked black pepper
Instructions
Method:
- Preheat the oven to 200 degrees Celsius.
- In a large roasting dish (mine was 20cmx30cm), spread out a thin layer of passata across the base of the dish. Add some fresh basil leaves. Spread 2 lasagna sheets across the top of the passata, followed by some more passata, pieces of ham and sliced mozzarella. Sprinkle with a third of the parmesan cheese and approx a third of the spinach leaves. Add some more fresh basil and season well. Repeat this process another time. Once you have two full layers, cover the top with the last of the lasagna sheets, some more passata, any mozzarella or parmesan you have left and artichokes (if using).
- Bake for 30-35 minutes. The cheese should be golden and bubbling.
