Egg, Tomato & Bacon Tortilla Breakfast Wrap
Ingredients
- 1 tortilla medium/large
- 2–3 eggs lightly whisked
- sea salt & cracked black pepper
- 3 bacon rashers finely chopped
- 1/2 tomato sliced
- 2/3 cup mozzarella cheese or tasty cheese, grated
- 2 spring onions finely sliced
Instructions
- Place a large frying pan (one that is about the size of the tortilla) over medium heat. Whisk and season the eggs with salt and pepper. Add the bacon to the pan and cook for 2–3 minutes. Then lay the tomato slices on either side of the frying pan (to leave the middle clear to fold in half). Pour in the egg, add half the grated cheese and cook for 3 minutes.
- Place the tortilla on top of the egg, then flip the tortilla over with a spatula or dinner plate, so that the tomato is facing up. Slip it back into the frying pan.
- Add the spring onion and remaining grated cheese to one half of the pan. Place the lid on and let the cheese melt for 2 minutes. Fold the tortilla over so it covers the filling. Remove from the pan, slice into wedges and enjoy.
