Creamy Pesto Chicken Penne Salad

Ingredients
- 1 cup baby spinach chopped
- 1 cup pasta cooked, I used penne
- 1/2 cup sun-dried tomatoes
- 1 lebanese cucumber cut into half moons
- 1 cup cooked chicken
- 3 spring onions finely sliced
- 1/4 cup slivered almonds toasted
- sea salt & cracked black pepper
- 2 tablespoons pesto
- 3 tablespoons greek yoghurt or natural yoghurt
- 1–2 tablespoons water added slowly
Instructions
- For the dressing: Mix the pesto and yoghurt in a small bowl. Add the water gradually, a teaspoon at a time, until you reach your desired consistency. It should be runny enough to drizzle over the salad but still creamy.
- In a large bowl, combine the spinach, cooked pasta, sun-dried tomatoes, cucumber, cooked chicken, spring onion and almonds. Season really well.
