Chocolate & Coconut Balls

One of my all time favourites. Simple, yummy and super quick! There is a reason I’ve been making these for nearly 30 years – they are SO damn good! Pop them in your kids' lunchboxes for a bit of an old-school treat.
Makes about 25 balls

Ingredients
 
 

  • 250 g Marie biscuits packet
  • 1 cup desiccated coconut plus extra for rolling
  • 3/4 cup cocoa powder unsweetened
  • 395 g sweetened condensed milk can
  • 1 teaspoon vanilla bean paste

Instructions
 

  • Place the biscuits in a food processor and process until they form fine crumbs.
  • Place the biscuit crumbs, desiccated coconut, cocoa powder, condensed milk and vanilla in a large bowl. Stir to combine.
  • Roll out your balls (slightly smaller than a golf ball), then roll them in the extra coconut to coat.
  • Place the balls in the fridge for about 1 hour to firm up. Enjoy!
