CHICKEN NUGGESTS - FOR ADULTS, KIDS & BABIES!!

Makes 30-35 nuggets approx.

Prep time: 15 mins

Cook time: 20 mins

Ingredients:

  • 500g free range chicken mince

  • 1 large onion, finely diced

  • 3 rashers of bacon, finely chopped

  • 2 medium zucchini, grated, excess juice squeezed

  • 1/2 cup of sweet potato, grated (optional)

  • 4 slices of wholemeal bread or 1.5 cups of breadcrumbs

  • 1/3 cup of full fat milk

  • 1 cup of grated tasty cheese

  • 2 eggs

  • 1 tablespoon of cornflour

Method:

  1. Preheat oven to 180 degrees. Line 2x oven trays with baking paper.

  2. Place your bread slices in a food processor or blender to form breadcrumbs. Alternatively you can chop them really finely or buy packet breadcrumbs. Soak the breadcrumbs in the milk and let them sit for 10 mins.

  3. Combine the chicken mince, bacon, onion, zucchini, sweet potato (optional), breadcrumb/milk mix, tasty cheese, eggs and cornflour. Get your hands in there and give it a really good mix! You can also use a food processor if you’d prefer. I prefer leaving mine a little chunkier for both my girls.

  4. Dollop spoonful’s of the mix onto the trays and leave a little space in between each dollop. Bake these for approx. 20 mins or until golden and cooked throughout.

 

The nuggets freeze really well, store them in small snap lock bags or freezer silicon trays to pull out easily when needed.
