ONE PAN SALMON ZOODLES

This is SO easy and quick to make. It’s for one of those nights you don’t have any time or you can’t be bothered with making a slow dinner.
The zoodles make it really light and fresh.

Ingredients:

  • 400ml thickened cream

  • 2 lemons, zested & juiced

  • 3/4 cup frozen peas

  • 500g store-bought zucchini noodles

  • 1 bunch of asparagus, roughly chopped

  • 300g hot smoked salmon fillets, broken up into pieces

  • 1/3 cup dill, roughly chopped

  • Salt & Pepper

Method:

  1. Before you roughly chopped your asparagus, chop off the woody end. Throw them in a small microwave-safe bowl with 1 cup of water and cook on high for 1 minute. Drain and set aside.

  2. Preheat a frying pan on medium heat. Pour in the cream and lemon juice and bring to a boil. Stir for 1-2 mins until the mixture thickens. Turn down to a simmer.

  3. Add the zoodles, green peas, asparagus, salmon and half the dill to the pan. Cook, tossing, for 1-2 minutes until all heated through.

  4. Finish by sprinkling the remaining dill and lemon zest. Season well.
