One Pan Salmon Zoodles

This is SO easy and quick to make. It’s for one of those nights you don’t have any time or you can’t be bothered with making a slow dinner. The zoodles make it really light and fresh.

Ingredients
  

  • 1 bunch asparagus woody ends removed, roughly chopped
  • 400 ml thickened cream
  • 2 lemons zest & juice
  • 500 g zucchini noodles store bought
  • 3/4 cup frozen peas
  • 300 g salmon fillets hot smoked, broken up into pieces
  • 1/3 cup dill roughly chopped
  • sea salt & cracked black pepper

Instructions
 

  • Place the chopped asparagus in a small microwave-safe bowl with 1 cup of water and cook on high for 1 minute. Drain and set aside.

  • Preheat a frying pan over medium heat. Pour in the cream and lemon juice and bring to the boil. Stir for 1–2 minutes until the mixture thickens. Turn down to a simmer.
    400 ml thickened cream, 2 lemons
  • Add the asparagus, zoodles, green peas, salmon and half the dill to the pan. Cook, tossing, for 1–2 minutes until all heated through.

  • Finish by sprinkling over the remaining dill and the lemon zest. Season well and serve.
