How to: Make Your Weeknight Dinners Feel easier (without spending hours meal prepping)
Sundays don’t always look like slow mornings and organised meal prep. Sometimes they’re full of kids’ sport, birthday parties and family catch-ups, and by 5pm, you realise you haven’t even thought about the week ahead.
If that sounds familiar, these are five low-effort things you can prepare to take the pressure off weeknight cooking, even when you only have the time and energy for the bare minimum.

This isn’t about spending hours in the kitchen meal prepping or having everything perfectly planned out. It’s simply about doing a few small things that can make your week feel just a little easier.
1. Prep your Protein
Preparing a protein ahead of time is one of the easiest ways to make lunches and dinners come together faster during the week. Not only does it save time, but including a source of protein at meals helps keep you fuller for longer and makes your meals more satisfying.
This could be as simple as:
- Roasting a whole chicken
- Browning a batch of beef mince
- Boiling a few eggs
- Baking tofu or a tray of chicken thighs
- Keeping a few cans of tuna in the pantry for those “I have nothing to eat” moments
Having one protein ready to go means you’re not starting from scratch every meal. Simply add it to wraps, salads, grain bowls, pastas or stir-fries for an easy, nourishing meal that’s on the table in no time.
2. Wash and Chop Your Vegetables
Vegetables are often the first thing to get left off the plate when life gets busy, even though they’re packed with fibre, vitamins and minerals that help create balanced, nourishing meals. Taking just 10–15 minutes to wash and chop a few vegetables ahead of time can make it much easier to include them throughout the week.

This might include:
- Carrot, cucumber or capsicum sticks
- Washing lettuce or spinach
- Chopping broccoli, green beans or zucchini
- Roasting a tray of mixed vegetables
- Or simply picking up a few pre-washed salad bags from the supermarket, because convenience absolutely counts.
Having vegetables ready to go means they’re much more likely to make it onto your plate. Add them to wraps, salads, grain bowls, pastas or serve them alongside dinner for an easy way to boost the nutrition of your meals.
3. Prep a Carb or Base
Having a few simple staples ready to go can make weeknight dinners come together so much faster. Whether you’re throwing together a quick lunch, building a grain bowl or trying to get dinner on the table after a busy day, having a carb or base already prepared takes away one more thing to think about.
This might include:
- Cooked rice or quinoa
- Boiled potatoes ready to roast or add to salads
- A loaf of fresh or frozen wholegrain bread
- A few cans of beans or corn stocked in the pantry
- And in case of an emergency, a few rice or grain pouches can be a savior.
These staples provide lasting energy and help create balanced, satisfying meals. Simply pair them with a protein, plenty of vegetables and your favourite dressing or sauce, and dinner is almost done.
4. Make a Simple Sauce or Dressing
Never underestimate the power of a good sauce or dressing. It can completely transform a meal, making even the simplest ingredients taste fresh, exciting and full of flavour. It’s also a great way to avoid flavour fatigue, so you’re not eating the same meal on repeat, even if you’re using similar ingredients.

Try preparing one or two favourites, such as:
- A simple olive oil, lemon, honey and Dijon mustard dressing
- A creamy yoghurt and herb dressing
- Homemade or store-bought pesto
- Tahini dressing or hummus for grain bowls and wraps
Having a couple of sauces or dressings ready to go means you can mix and match throughout the week. The same chicken, vegetables or grain bowl can feel like a completely different meal with just a simple change of flavour, making healthy eating feel easy and enjoyable.
5. Have a Backup Meal Ready
This is your safety net for the nights when life doesn’t go to plan. We all have those days where work runs late, plans change or cooking is the last thing you feel like doing. Having one meal ready to go can take the pressure off and help you avoid reaching for takeaway.
It doesn’t have to mean spending hours batch cooking. It can be as simple as making a little extra at dinner and freezing half for another night.
Some easy options include:
- A soup or curry
- A pasta bake or lasagne
- Leftovers from earlier in the week
- A simple freezer meal you’ve prepared ahead of time
It doesn’t need to be anything fancy, just something you know you can rely on. Future you will be very grateful to have a nourishing dinner ready and waiting.

Life is busy, and meal prep doesn’t need to be perfect to make a difference. Focus on doing what you can, when you can, and give yourself a little head start for the week ahead.
