Summer Bocconcini Bruschetta

A simple and classic summer dish. This takes less than 15 minutes to put together and it’s perfect for a weekday lunch or dinner.

Ingredients
  

  • 6 tomatoes medium, diced
  • 1 red onion small, finely diced
  • 1 cup basil leaves chopped
  • 10 cherry bocconcini balls quartered
  • sea salt & cracked black pepper
  • 4 slices bread wholemeal sourdough
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar

Instructions
 

  • Place the chopped tomatoes in a bowl. Add the red onion, basil and bocconcini and combine. Season well.
    6 tomatoes, 1 red onion, 1 cup basil leaves, 10 cherry bocconcini balls
  • Toast bread in the toaster until your desired crunch is reached. Add the tomato mix to each piece of toast, then drizzle over the olive oil and balsamic vinegar.
    4 slices bread, 1 tablespoon extra virgin olive oil, 1 tablespoon balsamic vinegar
