Quick & Easy Tuna & Corn Mix

- 370 g canned tuna drained
- 125 g canned corn drained
- 2 spring onions finely sliced
- 1 handful parsley leaves or mint leaves, finely chopped
- sea salt & cracked black pepper
- 2 tablespoons greek yoghurt or natural yoghurt
- lemon juice good squeeze
- red chilli flakes optional
- rocket leaves optional
- sourdough bread optional
Combine the tuna, corn, spring onion and parsley or mint in a bowl. Season well, then stir through the yoghurt and lemon juice.
370 g canned tuna, 125 g canned corn, 2 spring onions, 1 handful parsley leaves, 2 tablespoons greek yoghurt, lemon juice
Feel free to add chilli flakes and rocket, if desired.

Serve the tuna mix on its own, as a dip with crackers, on corn thins or sourdough, or in a wrap or sandwich.
