180gsoba noodles
1tablespoonpeanut oilor extra virgin olive oil

Marinade
1 tablespoon miso paste
1 teaspoon honey
1 teaspoon rice wine vinegar
1 tablespoonsesame oil
2 tablespoons tamari
Sauce
1 teaspooncornflour
1 tablespoon water
3cm piece ginger, finely chopped
2 tablespoon soy sauce or tamari
1 tablespoon rice wine vinegar
1 teaspoon brown sugar
Instructions
For the marinade: Place all the ingredients in a bowl and mix well. Place the chicken pieces in the marinade and coat. Leave for at least 20 minutes, but a few hours is ideal.
For the sauce: In a bowl or jug, mix the cornflour and water first to combine. Then add the remaining ingredients and combine well. Set aside.

Bring a large saucepan of water to the boil. Add the soba noodles and cook for 3 minutes (or according to packet instructions). Drain and set aside.
180 g soba noodles
Place a large frying pan over medium heat. Add the chicken pieces and cook each side for about 5–6 minutes, or until cooked through. Remove and set aside. Wipe out the pan if charred.

Place the same pan back over high heat. Add the oil and let it heat. Add the mushrooms and cook, stirring, for 2–3 minutes until they colour. Add the broccolini pieces and stir through for 2 minutes. Then add the snow peas and edamame. Pour the sauce into the pan and stir through over high heat for 1–2 minutes. Turn off the heat. Gently stir through the soba noodles.

Divide the soba noodles and veggies among bowls. Slice the chicken thighs and place on top. Sprinkle over the sesame seeds and spring onion, if desired.
