I don’t usually love a trend, but saw this going round on reels. I was an absolute Friends nut, so thought I would do my own version of the salad.This is my variation of Jennifer’s salad. I’ve changed a few things and it’s pretty damn amazing! Please make sure you give it a go!
2cupsfreekahcooked (you can also use pearl barley, burghal or brown rice)
2lebanese cucumberschopped
1red oniondiced
1cupparsley leaveschopped
1cupmint leaveschopped
400gcanned chickpeasdrained & rinsed
3/4cupdried cranberries
1/2cupdanish feta cheesecrumbled
3/4cupalmondsroasted, chopped
1/2cupextra virgin olive oil
1tablespoontahini
1tablespoonhoney
1lemonjuice squeezed
sea salt & cracked black pepper
Instructions
Place the cooked freekah, cucumber, red onion, parsley, mint, chickpeas, dried cranberries, feta and chopped almonds in a large bowl.
2 cups freekah, 2 lebanese cucumbers, 1 red onion, 1 cup parsley leaves, 1 cup mint leaves, 400 g canned chickpeas, 3/4 cup dried cranberries, 1/2 cup danish feta cheese, 3/4 cup almonds
To make the dressing, mix all the ingredients together and season really well. Adjust to taste.
1/2 cup extra virgin olive oil, 1 tablespoon tahini, 1 tablespoon honey, 1 lemon, sea salt & cracked black pepper
Pour the dressing over the salad and toss gently together.
