Jennifer Aniston Salad

I don’t usually love a trend, but saw this going round on reels. I was an absolute Friends nut, so thought I would do my own version of the salad.
This is my variation of Jennifer’s salad. I’ve changed a few things and it’s pretty damn amazing! Please make sure you give it a go!

Ingredients
 
 

  • 2 cups freekah cooked (you can also use pearl barley, burghal or brown rice)
  • 2 lebanese cucumbers chopped
  • 1 red onion diced
  • 1 cup parsley leaves chopped
  • 1 cup mint leaves chopped
  • 400 g canned chickpeas drained & rinsed
  • 3/4 cup dried cranberries
  • 1/2 cup danish feta cheese crumbled
  • 3/4 cup almonds roasted, chopped

Dressing

  • 1/2 cup extra virgin olive oil
  • 1 tablespoon tahini
  • 1 tablespoon honey
  • 1 lemon juice squeezed
  • sea salt & cracked black pepper

Instructions
 

  • Place the cooked freekah, cucumber, red onion, parsley, mint, chickpeas, dried cranberries, feta and chopped almonds in a large bowl.
  • To make the dressing, mix all the ingredients together and season really well. Adjust to taste.
  • Pour the dressing over the salad and toss gently together.
