Perfect to serve alongside soups, pastas and casseroles!When it comes to choosing your bread, you can go with whatever loaf you like. Just choose one that has a good amount of dough in the middle and is not too high, as it won’t cook enough the whole way through. I go for ciabatta as it works really well!Please note: I had a large ciabatta so I only made one side into garlic bread (and froze the other side). The recipe below will only make one half of a large loaf.
Preheat the oven to 180°C conventional (160°C fan-forced). Slice the bread open down the middle and separate the two sides. Place on a baking tray.
In a small bowl, mix the butter, olive oil, garlic, parsley, salt and pepper. Spread over the bread and push into the dough with the back of a spoon. Cover gently with foil (try not to let the foil touch the garlic paste).
4 tablespoons butter, 2 tablespoons extra virgin olive oil, 3 cloves garlic, 1/4 cup parsley leaves, sea salt & cracked black pepper
Place the tray in the oven and bake for 10 minutes. Remove the foil and bake for another 8 minutes until the edges are golden and crispy, but the middle is still fluffy and doughy. YUM!
