Fresh Oysters Served with Green Herb Vinaigrette

Ingredients
  

  • 12-18 fresh oysters shucked
  • 1 teaspoon dill very finely chopped
  • 1 teaspoon parsley very finely chopped
  • 1 teaspoon mint very finely chopped
  • 1 teaspoon chives very finely chopped
  • 1/3 cup extra virgin olive oil
  • 1 lemon zest & juice
  • serve with fresh lemon wedges & sea salt flakes

Instructions
 

  • In a small jug or bowl, mix together the finely chopped herbs, along with the extra virgin olive oil, lemon zest and lemon juice.
  • Arrange the oysters on a plate/platter. You can drizzle the vinaigrette over the oysters or serve it in a little dish next to the oysters.
  • Serve with lemon wedges & sea salt.
