In a large bowl, combine the pork mince, spring onion, ginger, garlic, soy sauce, sesame oil, chilli oil, rice wine vinegar and coriander. Mix well until fully combined.
Line the base of an oven-safe dish with a layer of wonton wrappers. Spread a layer of the pork mixture evenly over the wrappers, pressing it right to the edges. Add another layer of wonton wrappers, ensuring the meat is fully covered. Repeat this layering process until all the pork mixture is used, finishing with a layer of wonton wrappers on top.

Pour the chicken stock evenly over the top layer.

Place the dish into a large deep pan or pot. Carefully pour hot water into the pan so it comes up around the sides of the dish, reaching near the top. Cover with a lid and cook on the stovetop over medium heat for 25-30 minutes, or until the pork is cooked through and the wonton layers are soft and tender. Carefully remove from the pan.
Top with soy sauce, chilli oil, spring onion, sesame seeds and fresh coriander before serving.
