The ultimate indulgent side dish! I know I usually preach healthy recipes, but sometimes you just have to relax and enjoy. This recipe is worth every calorie.
Preheat the oven to 200°C conventional (180°C fan-forced). Grease a large baking dish.
Using a mandoline or sharp knife, cut the potatoes into 1–2 mm slices.
1.5 kg potatoes
Place the parmesan, cheddar, cream, milk, melted butter and spices in a large bowl. Season really well and mix to combine. Add the potato slices, then get your hands dirty to coat all the potato slices with the cream mix, making sure to separate slices that are sticking together.
1/2 cup parmesan cheese, 1/2 cup cheddar cheese, 1 3/4 cups thickened cream, 3/4 cup milk, 2 tablespoons butter, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon paprika
Place piles of the potato slices vertically in the baking dish, facing the slices upright and tucking them in quite tightly together. If you don’t have enough slices, just cut some more. Pour the remaining cream mixture onto the potatoes. Cover with foil and bake in the oven for 1 hour.
1.5 kg potatoes
Remove the foil and continue baking for 25–30 minutes, or until golden and crispy on top.
