Couscous With Capsicum, Tuna & Almonds

- 220 g Simply Wholesome Pantry Instant Nourish Bowl Couscous
- 1 lebanese cucumber chopped
- 1 cup cherry tomatoes quartered
- 1 yellow capsicum chopped
- 1 cup chickpeas drained & rinsed
- 270 g canned tuna
- 1/2 red onion thinly sliced
- 1/3 cup coriander leaves roughly chopped
- 1/3 cup flaked almonds toasted
- 2 tablespoons extra virgin olive oil
- 1/2 lemon juice squeezed
- sea salt & cracked black pepper
In a large bowl, combine the couscous, cucumber, cherry tomatoes, capsicum, chickpeas, tuna, red onion, coriander and almonds.
Gently toss everything together until well mixed. Add the olive oil and lemon juice. Season well and serve.
