1cupsugar snap peas or snow peas, trimmed & roughly chopped

1–2chicken breasts from a store bought roasted chicken, chopped
1cupthai basil leaves
1/2cupcashewsroasted & chopped
1/3cupfish sauce
1limejuice squeezed
1tablespoonbrown sugar
1red chillilarge, finely sliced
1–2tablespoonssesame oiloptional
Instructions
For the dressing: Place all the ingredients in a small bowl or jug and combine. Adjust to taste.
For the salad: Place the salad mix, cucumber, sugar snap peas, spring onion, chicken, thai basil and cashews in a large bowl. Drizzle over the dressing and toss through.
