Preheat the oven to 180°C conventional (160°C fan-forced).
Place the brie in a small baking dish and bake for 15 minutes.
Meanwhile, heat a medium frying pan over medium heat. Toast the almonds for about 5 minutes, stirring occasionally so they don’t burn. Add the butter and stir through until melted. Then add the honey and rosemary and mix well.
Remove the brie from the oven and use a sharp knife to cut off the top. Pour over the honey almonds. Serve immediately.
