COBRAM ESTATE EXTRA VIRGIN OLIVE OIL LEMON COOKIES

The perfect little treat or lunchbox snack.

It only takes 5 easy steps and very little prep time to make these little drops of citrus-flavoured heaven.

The @cobramestate Lemon Infused Extra Virgin Olive Oil adds another level of citrus flavour to these little gems, you have to give them a go.

Makes 12-15 cookies

Ingredients:

  • 3/4 caster sugar

  • 1 large egg

  • 1/2 cup @cobramestate Lemon Infused Extra Virgin Olive Oil

  • 1 lemon, zested

  • 1/2 tsp baking soda/bicarb soda

  • 2 cups plain flour

  • 2 tbsp icing sugar

Method:

  1. Preheat the oven to 180 degrees Celsius. Line a large baking tray with baking paper.

  2. In a bowl, add the caster sugar, egg, lemon zest, and Cobram Estate lemon-infused extra virgin olive oil. Mix well to combine.

  3. Add the baking soda/bicarb soda and the flour to the bowl and stir until just combined.

  4. Place the icing sugar in a small bowl. Roll out the batter into small balls with your hands and then dunk them in the icing sugar to coat them. Lay them out on the baking tray.

  5. Bake the cookies for 12-14 minutes. Remove and place them on a cooling rack.
