Yummy Yummy Guacamole

So easy, so fresh and so yummy! I like my guac chunky so I don’t mash it up too much. Please check the heat of your jalapeño – some of them can almost blow your head off. I always buy two in case, as I don’t like it ultra hot. Feel free to add some sriracha sauce on top too.

Ingredients
  

  • 4 avocados medium
  • 150 g cherry tomatoes chopped
  • 1/2 red onion large, very finely chopped
  • 1/2 cup coriander leaves roughly chopped
  • 1/2 jalapeño thinly sliced
  • 1 lime large, juice squeezed
  • sea salt & cracked black pepper

Instructions
 

  • Smash up your avocados in a large bowl until you reach your desired consistency.
    4 avocados
  • Add the cherry tomatoes, red onion, coriander, jalapeño, lime juice and salt and pepper to taste.
    150 g cherry tomatoes, 1/2 red onion, 1/2 cup coriander leaves, 1/2 jalapeño, 1 lime, sea salt & cracked black pepper
  • Serve with corn chips or tortilla strips.
