Salmon Crispbreads

Ingredients
  

  • 3 Ryvita crackers
  • 2 tablespoons cream cheese
  • 1 cup dill sprigs, plus extra to serve
  • 1 red onion small, 1/2 sliced, the rest finely chopped
  • 6-8 slices smoked salmon
  • 1/2 lebanese cucumber cut into thin rounds
  • 1/2 lemon juiced
  • Sea salt & cracked black pepper

Instructions
 

  • Spread cream cheese on each Ryvita cracker. Top with cucumber rounds, smoked salmon, a few slices of red onion. Drizzle with lemon juice, and season with salt and pepper. Garnish with extra dill.
