Ingredients

  • 125 g butter melted
  • 1 cup self-raising flour
  • 0.5 cup shredded coconut
  • 0.75 cup caster sugar
  • 4 tbsp canned passionfruit pulp (you can use fresh passionfruit pulp too)
  • 550 g sweetened condensed milk
  • 0.333 cup fresh lemon juice
  • 1 tsp lemon zest

Instructions

  • Preheat the oven to 180°C conventional (160°C fan-forced). Line a 28 cm x 18 cm baking tray with baking paper.
  • For the base: Place all the ingredients in a bowl and mix well. Press into the prepared tray and spread evenly with a wooden spoon (it doesn’t have to be perfect). Bake for 12–14 minutes or until golden brown. Remove and let cool.

  • Reduce the oven temperature to 160°C conventional (140°C fan-forced).
  • For the topping: Place all the ingredients in a bowl and mix well. It will thicken up as you mix. Spread evenly over the cooked base, then bake for 15 minutes.
550 g sweetened condensed milk, 0.333 cup fresh lemon juice, 1 tsp lemon zest, 4 tbsp canned passionfruit pulp
  • Refrigerate for 2–3 hours to firm up, then slice into pieces. It is magical!
