Ingredients

  • 180 g soba noodles
  • 1 tbsp peanut oil or extra virgin olive oil
  • 1 cup mushrooms sliced
  • 1 bunch broccolini chopped into pieces
  • 1 cup snow peas sliced lengthways
  • 0.75 cup edamame beans thawed
  • 2 tbsp sesame seeds

Marinade

  • 2 salmon fillets about 150 g each
  • 1 tbsp white miso paste
  • 1 tsp honey
  • 1 tsp rice wine vinegar
  • 1 tbsp sesame oil
  • 2 tbsp tamari

Sauce

  • 1 tsp cornflour
  • 1 tbsp water
  • 3 cm ginger piece finely chopped
  • 2 tbsp soy sauce or tamari
  • 1 tbsp rice wine vinegar
  • 1 tsp brown sugar

Instructions

  • For the marinade: Combine all the ingredients in a bowl. Place the salmon pieces in the marinade and coat. Leave for at least 20 minutes, but a few hours is ideal.
2 salmon fillets, 1 tbsp white miso paste, 1 tsp honey, 1 tsp rice wine vinegar, 1 tbsp sesame oil, 2 tbsp tamari
  • For the sauce: In a bowl or jug, mix the cornflour and water. Then add the remaining ingredients to the bowl and combine well. Set aside.
1 tsp cornflour, 1 tbsp water, 3 cm ginger piece, 2 tbsp soy sauce, 1 tbsp rice wine vinegar, 1 tsp brown sugar
  • Bring a large saucepan of water to the boil. Add the soba noodles and cook for 3 minutes (or according to packet instructions). Drain and set aside.
    180 g soba noodles
  • Place a large frying pan over medium heat. Add the salmon pieces and cook each side for about 3–4 minutes (or to your liking). Remove and set aside on a plate. Wipe out the pan if charred.
  • Place the same frying pan back over high heat. Add the oil and let it heat. Add the mushrooms and cook, stirring, for 2–3 minutes until they colour. Add the broccolini and stir through for 2 minutes. Then add the snow peas and sauce to the pan and stir over high heat for 1–2 minutes. Stir through the edamame beans, then turn off the heat. Add the soba noodles and gently stir through the sauce.
