Green Beans with Feta, Almonds & Cranberries

- 1 kg green beans washed and trimmed
- 1/2 bunch parsley roughly chopped
- 1/2 bunch mint roughly chopped
- 5 spring onion thinly sliced
- 240 grams Danish feta crumbled
- 1 cup almonds roasted and roughly chopped
Dressing
- 1/3 cup lemon juice
- 1/3 cup extra virgin olive oil
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 teaspoon sea salt flakes
- 1 teaspoon cracked black pepper
Bring a large pot of salted water to the boil. Blanch green beans for 3 minutes. Remove and run under cold water to stop the cooking.
For the salad: Mix together the green beans, parsley, mint, spring onion, feta and almonds.
For the dressing: Combine all ingredients in a small bowl or jug. Drizzle over the salad before serving.
