Green Beans with Feta, Almonds & Cranberries

Ingredients
  

  • 1 kg green beans washed and trimmed
  • 1/2 bunch parsley roughly chopped
  • 1/2 bunch mint roughly chopped
  • 5 spring onion thinly sliced
  • 240 grams Danish feta crumbled
  • 1 cup almonds roasted and roughly chopped

Dressing

  • 1/3 cup lemon juice
  • 1/3 cup extra virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sea salt flakes
  • 1 teaspoon cracked black pepper

Instructions
 

  • Bring a large pot of salted water to the boil. Blanch green beans for 3 minutes. Remove and run under cold water to stop the cooking.
  • For the salad: Mix together the green beans, parsley, mint, spring onion, feta and almonds.
  • For the dressing: Combine all ingredients in a small bowl or jug. Drizzle over the salad before serving.
