Preheat the oven to 180°C conventional (160°C fan-forced).
Heat the olive oil in a large ovenproof pot or skillet over medium heat. Add the onion and stir for 2–3 minutes. Add the garlic and cook, stirring, for another 2–3 minutes. Then add the grated veggies and stir once more for 2–3 minutes.
3 tbsp extra virgin olive oil, 2 brown onions, 3 cloves garlic, 1 carrot, 1 zucchini
Increase the heat to high and add the beef mince in chunks. Use a wooden spoon to break the mince up for about 5 minutes. Add the bay leaves (if using), tomato paste, canned tomatoes, passata and beef stock cube. Refill the passata bottle with the water, shake it and pour into the sauce. Season well and simmer for 10 minutes to develop the flavour.
1 kg beef mince, 2 bay leaves, 2 tbsp tomato paste, 400 g canned crushed tomatoes, 700 g passata, 1 beef stock cube, 1.5 cups water
Turn the heat down to a simmer. Tear the fresh lasagna sheets in half and submerge them in the sauce, one at a time. Use a wooden spoon to gently push them to the bottom. Continue with the rest of the sheets, filling the empty spaces and covering with the sauce. Top the lasagna with mozzarella slices.
1 packet lasagna sheets, 250 g mozzarella cheese
Place the lid on the pot and bake for 15–20 minutes. Remove the lid and sprinkle over the basil. Serve.
